Blueberry + Chia Seed Oatmeal 

Oatmeal has always been one of my fav breakfast meals. It’s hearty, healthy, filling, and just plain ole yummy. Well, ever since baby girl has joined us I have eaten it just about every morning due to its wonderful lactation benefits. But, when you eat the same thing every day (every. day.) you become desperate for new ways to mix it up. After months of my usual oatmeal, flax seeds, water, repeat, I decided to change things up. I came across a blueberry oatmeal recipe and decided to put my own spin on it.  and voila! It is now my favorite (not to mention super quick and easy) oatmeal go-to. It is packed full of fiber, antioxidants, and omega-3 fatty acids making it the perfect way to start your day. 

First start by combining almond milk and oats into a pot. Then add in chia seeds and honey and stir all together. {Make sure to do this before adding the rest, otherwise the honey will cause everything to stick together making it difficult to combine.} 

Toss in cinnamon, lemon juice, vanilla, and a pinch of Himalayan sea salt. Top it off with a heap of blueberries. 

Mix all together and bring to a boil. Turn heat down to medium/low and let simmer for about 10 mins. 

Let sit for about 5 mins, then serve. 

I love blueberries, but any fruit would work in this recipe. I’ve used bananas before and it was delicious! 

4 cups almond milk

2 cups old fashioned rolled oats (not instant) 

3 tbsp chia seeds

2 tbsp raw honey

1 tsp cinnamon

1 tsp vanilla extract

Squeeze of lemon juice 

Dash of sea salt 

Large handful blueberries 


• place all ingredients in a medium size pot and bring to a boil. 

• reduce heat to medium/low and let simmer for 10-15 mins, stirring often until liquid has been absorbed. 

• top with fresh blueberries and enjoy. 

Makes 4 servings
