watermelon + heirloom tomato salad

Sweet, sweet summatime. Pool hangs, cookouts, and long beach days are back. And losing yourself in a fantastically freeing tranquil picnic is one of the best activities of the sunshine season. Throwing your favorite blanket down on the grass, sand, or tile and surrounding yourself with people you love and a hodgepodge of eclectic dishes is what it’s all about.

So excited to share one of my favorite summertime dishes with you. This watermelon + heirloom tomato salad is ultra-hydrating and the perfect compliment to those rising temps. The tomatoes and cucumbers in this recipe were grown in our garden and the freshness in taste is just incomparable! Ripe heirloom tomatoes, juicy watermelon, crisp cucumbers, and sweet corn make for one delightful combo. I serve it up with a glass of white, my hubs favorite bluegrass tunes, and a big dose of Vitamin D.

Recipe: (I don’t measure out the ingredients. Just add as much of each as I want.)

Chopped Watermelon

Ripe Heirloom Tomatoes

Sliced Cucumbers

Sweet Corn- canned or fresh

Tessemae’s Lemon Garlic Dressing (If you can not find this, EVOO + lemon juice + a pinch of garlic works just fine)
